Your jars will probably colonize at different rates. Some will be far faster while others will lag behind. This is fine. The two jars below are a good example of this, they were both innoculated about 25 days proir. You want the entire surface area with in the jar to be completely covered before you go past this step. (Pic #2) If you can still see any area that is not covered do not proceed as seen in Pic #1 You can proceed with this step on a jar per jar basis all jars do not need to be done at the same time.
Once you have a jar that is covered 100% by the white growth (mycelium) it is ready to be removed from the jar (birthing). It's best to allow the cake to remain in the jar for 3-5 days after it's been covered completely to allow the mycelium to penetrate to the inner most of the growing medium. It's not vital to leave it in the jar a few extra days after it's fully colonized just a good suggestion.
